Almond milk is a great alternative to cow's milk for those of us who can't eat dairy, or for those that choose not to for health reasons. These days, almond milk is readily available in most grocery stores, but it is incredibly easy to make and customize to your tastes! Oh, and homemade almond milk is much creamier (translation- more satisfying!) Here's my recipe for fresh, preservative and sugar free almond milk :)
-1 Cup Raw Almonds (soak overnight in water and drain)
-2.5 Cups Filtered Water
-1 teaspoon Vanilla Extract
-Pinch of Nutmeg
-Pinch of Sea Salt
1. After soaking and draining the almonds, place them in a blender (I use a Vitamix) along with 2.5 cups of filtered water. Blend until smooth.
2. Here you have the option of leaving your almond milk chunky or using a nut milk bag to remove the gritty nut texture. I skip the straining and keep as much nutrients in my milk as possible.
3. Add the vanilla extract, nutmeg and sea salt. Mix it up and store in an airtight container. How easy is that? Enjoy your fresh, almond milk :)
